Cashew hummus

We always have cut up veggies in our fridge this time of year.  They are so tasty and when they are already cut up, they are so easy.  In fact, Patrick had them for breakfast yesterday since he could just grab and go.

We’ve been using a lot of ranch drssing as dip lately so today I made the Raw Cashew Hummus from glutenfreegoddess.

I used roated garlic cloves (so easy: cut the top off a head of garlic, cover in olive oil, add salt and pepper, wrap in foil, put in a 400 oven for 15 minutes) that I had hanging around in the fridge.  I also added the juice from a half a lime to zip it up a bit.

So very tasty!
