Hey there,

I know it’s been awhile since you’ve heard from me.

I’ve been surviving this pandemic thing and staying at home. I’ve been trying to figure out how to support my kids with at-home-learning, while I also try to keep the house clean, and keep going with my business.

The biggest lesson I’m still learning is I don’t have control over everything. If I let go, I’m happier.

Let go of worrying about when the pandemic will end. Let go of trying to control my kids to be “perfect students” at home. Let go of when the government will make decisions.

It’s not always easy, but it’s helpful when I can.

Mommy Moods & Kids Long-Term Health

1 in 5 people will experience mental illness in any given year in Canada. This is truly an epidemic. It doesn’t only affect the person, their jobs, their health, it affects the people around them.

Sadly, it has a long-term negative effect on children. The ACEs study of Adverse Childhood Experiences found that children who grew up with the experience of a depressed family member in the household had an increased chance of long-term health consequences like chronic disease, mental illness, substance abuse and early death.

This is not great news. This is why it’s so important to address mom’s health when we’re talking about children’s health. They are part of the family unit. Everyone in the family affects the other.

This is why I’m passionate about working with moms.

Another Positive Pregnancy Test!

Another positive pregnancy test and ultrasound!

We are so pleased for this couple we have been working with for a year. They are a lovely couple who have been trying to conceive for over 7 years.

When they joined our clinic last year we did a series of acupuncture treatments with the mom-to-be for an IUI – Intrauterine Insemination. There were a couple failed attempts sadly.

Then, this spring they decided to go the next step of IVF – Invitro fertilization. Both husband and wife came in for assessments and started supplements, dietary and acupuncture regimes for 3 months. Their fertility clinic decided to switch to an IUI based on her bloodwork and ultrasound during the cycle that was meant to be an IVF cycle.

Low and behold – a positive pregnancy test! This is the first time she has been pregnant and is almost near the end of her first trimester.

Asparagus Soup

1 tbsp of coconut oil

3 green onions, sliced – fresh from the garden!

3 small red potatoes, cubed– organic preferred

¾ of a bunch of asparagus, cleaned, broken into pieces

1 quart of organic chicken broth

½ cup of water

 

Melt coconut oil in soup pot over medium heat

Saute onions in pot

Add red potatoes, chicken broth, and water, bring to boil

Add asparagus when potatoes almost tender.

Blend with hand blender, food processor or blender. I kept the tips out of the blender step (that’s why you see chunks in the soup pot!)

Asparagus – 10 Things You Didn’t Know!

  1. There are over 300 varieties of asparagus but only 20 are edible
  2. Originally from the Mediterranean and now it is grown all over the world
  3. Normally it is green or greenish purple but white ones are grown underground
  4. Low in calories – only 24 calories in 1 cup! And half of those calories come from protein
  5. Excellent source of potassium, vitamin K, folic acid, vitamins C and A, riboflavin, thiamin, B6
  6. Good source of dietary fiber
  7. It also has iron and protein!
  8. Historically used in the treatment of arthritis – recently antioxidants and anti-inflammatory compounds have been discovered in asparagus which would explain the benefit to sore joints
  9. Asparagus is a diuretic and can make your urine smell different likely due to the amino acid asparagine
  10. It loses it many nutrients quickly so ideally eat it within 1 to 2 days after you buy it

Apricot Breakfast Bars

Steve has been off on paternity leave since June taking care of our little Jillian but he’s heading back to work this week. This is going to make my life a little more chaotic especially for mornings. I needed a quick breakfast to eat because I won’t have him with me helping to get myself and her out the door on time.

I found this recipe in Elana’s Pantry and made it last night. The house smelled amazing as it was baking! It tastes like a nutty cake with apricot flavour. It’s gluten-free, dairy-free, paleo-friendly and delicious. This morning I had a pie-slice of it with half a banana and felt full until lunch.

  • 1 cup dried apricots
  • 2 cups pecans
  • 2 eggs
  • ¼ teaspoon sea salt
  • 1 tablespoon vanilla extract
  • ½ cup chocolate chips of your choice, or none whatsoever
  1. Place apricots and pecans in a food processor and pulse until the texture of coarse gravel
  2. Pulse in eggs, salt and vanilla, until mixture forms a ball
  3. Remove mixture from food processor and work in chocolate chips
  4. Place mixture in a greased 8×8 baking dish or pie plate
  5. Bake for 25 minutes at 350°
  6. Cool and serve
