Homemade Strawberry Jam

We headed up to Barrie Hill Farms yesterday morning to pick some berries.  Wow were they ever ripe!!

My husband decided that we should make jam.  We’ve never made jam.  So I went online to find a recipe.  Do you know how much sugar they call for?!? Anywhere from 4-7 cups.  No way!

So, we experimented.  While the consistency is a little thin,it tastes delicious and it isn’t loaded with sugar!

  • 6 cups mashed berries
  • 1 cup sugar
  • 1 Certo liquid pectin
  • 2 Tbsp lemon juice
  1. Put the mashed berries and the pectin in a pot and bring to a boil.  Add the sugar, then the lemon juice.  Boil until thick (it was at least an hour, maybe two, should’ve timed it for you).
  2. Let it cool in some jars and put them in the freezer.  Apparently it will last about a month in the fridge.

We did two baskets of berries and got six jars of jam.  I had some on toast this am and it was Gooood!
