Gluten free pan fried fish

Many times I hear parents say that the only way their families eat fish is as fish sticks.

So here is a quick way to make them at home (and when I say quick, I mean faster than putting frozen ones in the oven quick!).

This is done about once a week at my house.  I don’t typically cut the fish into sticks but you can easily cut a large fillet into strips.

You will need:

  • medium bowl with 1 1/2 cups gluten free oat flour, 1 tsp fine sea salt, 1 tsp black pepper (feel free to add any spices that you enjoy – cajun fish sticks would be so good)
  • thawed fish fillets/pieces (instead of strips, try cubes and make fish bites)
  • light olive oil or coconut oil

To assemble:

  • warm 1 tbsp oil in a fry pan over medium heat
  • dredge the fish pieces in flour (if the pieces are dry, wet them in water first)
  • drop the fish into the hot oil
  • turn once browned (about 3-4 minutes) and finish the other side

That’s it!  I steam the veggies while I cook the fish and have the rice in the rice cooker on pre-set for when I get home.  This whole meat takes about 15 minutes to put together.  Just take the fish out of the freezer the night before or in the morning.  Have your veggies cut up in the fridge so that you just have to drop them into the steamer.  Rice cookers are cheap and invaluable for weeknight suppers.
