While grocery shopping last weekend, my boys looked at the ‘ready made’ rice pudding in the dairy case.
I remembered enjoying rice pudding quite a bit and my mother-in-law had made some dairy free when we first gave up milk products. She takes such good care of my husband 😉
Anyway, this weekend I made dairy-free rice pudding and it was really good. I used white basmati rice although next time I will use the brown rice for the added fibre and texture. Coconut milk and water replaced the milk. Surprisingly, there was very little coconut flavour left in the end product.
Combine in a medium saucepan:
- 1 cup rice
- 1 cup full fat coconut milk
- 2 cups water
- 2 Tablespoon vanilla extract (plus scrapes of one vanilla bean if you have one)
- 1 tsp cinnamon (play with this – Brendan found it too much, I quite like it)
- 4 Tablespoon of agave or honey (again, play with how sweet that you’d like it)
Cover and bring to a boil. Once it’s boiling, reduce heat to medium and cook until all the water is absorbed. Add in raisins if you enjoy them as we do. I put one large handful in, so maybe a 1/2 cup.
It was really good hot and cold.
