Chewy Granola Bar Recipe

We are always trying new granola bar recipes as the store bought ones are always loaded up with so much sugar.

  • 1 cup pitted dates
  • 1/4 cup maple syrup or honey
  • 1/4 cup pumpkin seed butter (or nut butter if you prefer)
  • 1/4 cup each: pumpkin seeds, raisins, hemp hearts, chocolate chips
  • 1 1/2 cups rolled oats (gluten free if you need)

*you can use anything to fill these up with goodness as long as the dry ingredients all measure up to the same quantity – use crispy rice cereal, different seeds, nuts, dried fruits…

What to do:

  1. Prepare an 8×8 pan by lining it with parchment paper.
  2. Cook the dates into a jam – in a small pot over low heat, add 1-2Tbsp water to the dates and cook until they fall apart. For raw – place the dates in a food processor or blender.
  3. Place all dry ingredients in a bowl and stir.
  4. In a small pot, melt the seed butter with the maple syrup or honey, stir until smooth.
  5. Pour the hot mixture over the dry ingredients and stir until blended.
  6. Dump the combined mixture into the prepared pan and press down until uniform. Cover with another bit of parchment paper. Cool in freezer for 30 minutes or until hard.
  7. Remove from pan, chop into bars (I did 9 bars).

These have kept really well in the air tight container in the freezer for a couple of weeks. Fabulous little snack or breakfast before the gym.

The first year after Steve died felt like a slow-m The first year after Steve died felt like a slow-moving, feet-stuck-in-mud search. 

First a search for meaning. Why did this happen? What did we do to deserve this? What could I have done differently? What could Steve have done differently?

Then a search for something to take away the pain. What can I distract myself with? Another work project. Let's eat more chips because who cares? I'm going to pour myself another glass of wine. Where is Steve and can he come back?

Finally a search for people like me who "got it." I struggled so much at the beginning with feeling so alone. Feeling like I was the only person I knew who lost their spouse so young. Because I WAS!

But then one-by-one these amazing other widowed people came into my life. They became my rescue team. The people I said goodnight to because Steve wasn't there. The people who I could share the strange things of Steve's I kept because they had those things too. 

I was so desperate for a group that understood me. And I was so lucky but also persistent. I found these people, but it wasn't by accident. 

This is why I've created the Mommy Map Support Group. A group of moms struggling to create a new map for their lives in the middle of a global pandemic. Being with moms who get the highs and lows of motherhood. Being with moms who won't judge each other for the secret nighttime snacks that we don't share with our kids. Or for the yelling we did a bit too much of today.

So how much should you eat? This particular study recommended less than 7 grams a day of gluten. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

What does that look like? ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Well, there's about 2-2.5g of gluten in:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 slice of wheat-based bread⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ English muffin⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ cup wheat-based cereal⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ cup of cooked wheat-based pasta⠀⠀⠀⠀⠀⠀⠀⠀⠀
8-10 saltine crackers⠀⠀⠀⠀⠀⠀⠀⠀⠀
½ large dinner roll⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
What should you do instead? Try other types of gluten-free grains like rice, quinoa, buckwheat and millet. Try adding more veggies to your pasta dishes with a little less noodle.
